INGREDIENTS

☀️ Pork ribs
✔️ 2 Lemons
✔️ 2 bay leaves
✔️ Black pepper
✔️ Salt flakes

✔️ 1 head of garlic
✔️ Extra virgin olive oil
✔️ Thyme
✔️ Figs
✔️ Escarole

PREPARATION

Let’s get out the BBQ! Ready?

1.Lie the ribs on a sheet of aluminum foil and season with salt and pepper. Add the chopped bay leaves, 2 sprigs of thyme, the zest of the lemons and the crushed garlic.
Rub it all together well.

2.Then add the olive oil, rub well and add the juice of the two lemons. Wrap the ribs in the aluminum foil and leave to marinate in the fridge for 24 hours.

3.Roast on the barbecue, wrapped in the same aluminum foil,  for 2 hours, controlling the temperature to between 160ºC and 170ºC (320 – 340ºF).

4.After this time, unwrap the aluminum foil, pour the juices into a bowl and brown the ribs on the meat-side, raising the temperature to 250ºC (482ºF).

5.Serve with a fig and escarole salad.
