Risotto with pork Secreto

INGREDIENTS
⭐ Pork secreto (special cut of pork) 450 g (1 lb)
✔️ Rice 300 g (1.5 cups)
✔️ Porcini mushrooms 300 g (10 1/2 oz)
✔️ 2 garlic cloves
✔️ 2 leeks
✔️ White wine 50 ml (3.5 tablespoons)
✔️ Grated Parmesan cheese 50 g (1/2 cup)
✔️ Butter 15 g (2/3 cup)
✔️ Chicken stock 2 liters (8 1/3 cups or 67.6 fl oz)
✔️ Salt
✔️ Black pepper
✔️ 1 large onion
✔️ Extra virgin olive oil
PREPARATION
1.Finely chop the garlic, onion and leek and fry them in the olive oil.
2.Clean and chop the mushrooms.
3.Grate the cheese and measure out the butter and white wine (so that everything is ready for later).
4.Cut the pork into squares and season it with salt and pepper.
5.When the vegetables are softened, add the rice, stirring so that everything is well mixed.
6.Add the mushrooms and wine, and allow the alcohol to evaporate for a minute.
7.Add the chicken stock little by little and stir to help the rice release the starch.
8.Add a little oil to a skillet over a high heat, and fry the pork until golden brown.
9.After about 17 minutes, add the butter and cheese to the rice and stir through.
Season with salt and ground black pepper.
10.Serve in a wide shallow bowl topped with the pork secreto.
