There is no better word to describe cured meats than traditional. They have a living history, almost as old as the human race, and they are a classic of Mediterranean cuisine.
The history of Costa Brava started more than a half century ago, when the Brothers Cañigueral began their business in the meat sector. In the 1980s they began to produce cured meats on a large scale. Today we continue to produce top-quality meats, always putting tradition and flavor first.

Jamón Serrano is a gastronomic and cultural delicacy, a gourmet product tracing roots from ancient times and continuing to the present day. It is a testimony of tradition and represents a society and culture that have made gastronomy an art.

HOW IS IT MADE?

First and foremost, the production of Spanish Jamón Serrano requires the best raw materials. We can guarantee this thanks to our fully vertical chain, with pigs on our farms and integration of the entire process. In addition, we pass strict compliance of product standards and regulations.

For our Jamon Serrano Costa Brava, we choose hams with thicker fat in the most critical areas as well as the right amount of fat through the leg. This first stage is crucial to ensuring that the the piece is optimal for subsequent finishing stages. In the next step, the fresh ham is covered with sea salt. Then drying and aging begins. Cellar aging takes place slowly to allow the ham to develop into a gourmet product. At the end of the cycle, the Serrano ham appeals to all the senses with impeccable color, aroma, appearance, and texture.

Serrano ham is a versatile food, rich in nutrients and proteins, low in calories, suitable for people of all ages and for a healthy diet. The table below reflects the traditional, natural, and delicious characteristics of the product.

PROTEINS

Source of essential proteins for muscle development. A healthy adult needs 40–60 g (1.4–2.1 oz) of protein a day. A serving of 150 g (5.3 oz) of ham would cover those needs, providing 45.75 g (1.6 oz) of protein.

"GOOD" FAT

As for fat content in our hams, 50% is monounsaturated and polyunsaturated, which is considered healthy. Linoleic acid, an essential fatty acid for energy efficiency, can only be obtained from food.

SODIUM

The body needs sodium to function properly, as it contributes to nerve and muscle function. Sodium also helps maintain a proper balance of fluids in the body.

MINERALS

Some of the most important minerals in ham are zinc, potassium, and calcium, and 100 g (3.5 oz) of ham provides 5% of the recommended daily intake. That serving of ham also provides up to 20% of the recommended daily intake of phosphorus.

GROUP B VITAMINS

B vitamins interact with proteins to ensure the body’s correct metabolism. For example: Due to its high content of vitamin B1, eating ham helps to manage stress and anxiety. B2 helps ensure healthy skin and promotes growth and repair of tissues, among other functions. Vitamins B12 and B6 play an important role in the formation of red blood cells and in the maintenance of the central nervous system.
